Simplistically speaking, Jfets are lower in gain than mosfets. I find jfets have a clearer, brighter sound while mosfets sound darker. Also, mosfets are more sensistive to failure from static, and are generally less reliable. That's why Zvex SHO's have an extra mosfet shipped in the box. The circuit I designed and posted the clip on here a while back used jfets exclusively and they can get a very dynamic, tube-like response, much better than any diode-clipping distortion circuit.
