2 cups buttermilk
1 egg
1/2 tsp salt
1 cup flour
1 tsp baking soda

measure buttermilk into bowl. beat well with wisk for 30 seconds, until frothy. add egg and salt. beat well another 30 seconds. is it frothy? OK!

combine flour and baking soda. add to buttermilk/egg/salt mixture. mix softly with fork until ingredients are just combined. do not overstir.

griddle must be HOT and lubricated. pour ~half cup of batter onto grill, quickly use fork to spread batter evenly about 1/4 inch thick --> no bulge in the middle. Cook about 1 minute or until bubbles form and edge looks cooked. flip and cook another 30-60 seconds.

I always add a drop or two of real vanilla or almond extract to my pancake batter.
Also, adding a tablespoon or so of vegetable oil to the batter makes them nice and moist.

Another favorite is to add cornbread mix to the batter, replacing half of the flour. Corn muffin pancakes rule.

This past Sunday morning I made buckwheat pancakes with grated apple added to the batter.

You can also substitute rum for vanilla extract.

I had some delicious cornmeal bananna walnut pancakes at Kate's Kitchen yesterday - yum!

I made french toast with cinnamonie stuff...and maple slurple...bacon and onions sautiated with eggs scramblled...add salt. pepper. italian seasonings, just springle it into the eggs goo. cook as required. clothed self. made most super super excellent coffee. most AAA+ coffee yes.
