A friend gave me the guts of a mid-80's Boss CE-2. Now I want to re-house it. Any tips on wiring up a 3PDT?

You'll have to find a schematic to get around the boss fet switching scheme. Find the input and output wires, then for the wiring, check out the FAQ at diystompboxes.com.
